广东河粉
【材料】湿河粉一斤,虾仁半斤,鸡蛋3-4个,叉烧肉2两,芦笋5条,大白菜业三张,葱两条,泡发的黑木耳和香菇,辣椒粉,生抽,白胡椒粉,料酒,油,糖各少许
1.河粉切成小块或条状。泡发香菇切成细条。葱切细粒。大白菜切成细丝。
2.芦笋去除底部硬的部分,切成2-3厘米的长条,放入加了少许盐的开水里焯熟(1分钟左右),入冷水晾凉,捞出待用。
3.炒锅中大火烧热,倒入河粉干煸至焦黄,盛出待用。
4.炒锅加少许油烧热,放入虾仁煸炒变色,加入生抽调味。虾仁捞出待用。
5.炒锅再加一勺油,直接把鸡蛋磕入锅中,稍煎片刻,用勺子炒散, 盛出待用。
6.同一锅中加入香菇和黑木耳翻炒,加少许料酒,生抽和糖调味。加入叉烧,河粉,大白菜,炒熟的虾仁,鸡蛋,加盐,胡椒粉,辣椒粉调味。然后加入芦笋拌匀。出锅前撒上葱花。
